DELICIOUS AND EASY CANNABIS BISCUITS

The only thing better than warm, flakey biscuits are warm, flakey cannabis biscuits! I love to start my day with a CBD-infused biscuit slathered with melted butter and honey!

These biscuits are great for dinner, too, and marry well with gravy or a nice vegetable soup.

This recipe is awesome for entertaining, as well. You’ll be the star of any pot-luck with a basket full of delicious CBD biscuits to add to the table. And don’t forget brunch! THC-infused biscuits will make your next Sunday get-together one to remember!

Easy to make on the spur of the moment, but completely freezable if you ever need to make them in advance, this is the flakey, yummy biscuit recipe you have been looking for.

Though I grew up in the south, biscuits from scratch were not something we made at home. Over the years, I’ve tried many, many recipes, not always successfully. Finally, I found one from that amazing goddess, Julia Child, which I was able to adapt for hemp ghee.

You can make your own hemp ghee using my recipe or try our ready-made Green Gold Hemp Ghee which is perfect for baking.

Some recipe hints and suggestions:

  • To keep these biscuits light, try to work the batter and the dough as little as possible.

  • If you don’t have a pastry blender, you can use two knives, cutting against each other, to slice up the ghee into the flour.

  • If you don’t have a round biscuit cutter, you can use the outer ring of a canning jar lid. (I did this for years!)

  • Make sure your baking powder is still active by adding a spoonful of it to a ½ cup of hot water. If it doesn’t bubble and froth, it’s too old and your biscuits will be flat.

  • You can freeze these in a ziploc bag and then pop them in the oven for 10 min at 350°F / 180°C. They come out warm, delicious, and just like fresh!

  • You can also turn these biscuits into strawberry shortcake by adding one tablespoon of sugar to the mix.

  • Please be responsible and make sure everyone eating these biscuits knows that they have cannabis in them. Surprises are not always fun when it comes to eating THC.

 

BECCA’S MAGIC HOMEMADE BISCUITS

WHAT YOU WILL NEED

INGREDIENTS:

240g / 2 c. FLOUR (minus 1 tablespoon)

1 tbsp. CORN STARCH

1 tbsp. of SUGAR (double this for strawberry short-cake!)

5 tsp. double acting baking powder

175g / 3/4 c. cannabis ghee (hemp-infused clarified butter)

1 c. of milk (or milk substitute like soy or oat)

 

KITCHEN STUFF:

A large cookie sheet

Parchment Paper

A flour sifter, tea strainer or some sort of mesh strainer

Metal whisk or fork

A pastry blender or 2 butter knives

A wooden spoon or rubber spatula

A well-floured surface for kneading

A large mixing bowl

A 2-3 inch round biscuit cutter  

COOKING INSTRUCTIONS

Before you start, preheat your oven to 425°F / 220°C.

Add your 2 cups of flour to a large mixing bowl and then remove one tablespoon of flour. Add the rest of your dry ingredients, making sure to sift the baking powder or push it through a strainer to remove all of the lumps. Mix with a whisk or a fork until all of the dry ingredients are completely combined.

Add your infused ghee. Using your pastry blender (or 2 butter knives cutting against each other) chop your ghee into your flour mixture until the ghee is in tiny four-coated pieces (“Pea sized” is what the original Julia Child recipe calls for, but be aware, they might not be round!)

Gently fold in your milk (or “other” milk) with a wooden spoon. Mix sparingly until you have a very wet, rather ugly dough that is just combined.

Turn your ugly dough out onto a heavily floured surface and using heavily floured hands, pat it gently into a wide circle. Fold it right to left and pat it out again, turning the whole thing a quarter turn counter-clockwise. Fold it right to left again, pat it out and turn it a quarter turn in the same direction. Do this six times. Keeping your hands and your surface nicely floured.

Once done, pat your dough gently into a vaguely 10 X 12 inch rectangle (25 X 30cm). Leaving as little space between as possible cut out your biscuits using the cutter. (It is actually all right if your rounds are not totally round because another biscuit cut takes a bite out of it.) Place them close together, but not touching, on your parchment paper-covered baking sheet. Give each one a little fluff by pushing on the sides with your fingertips so they stand a little taller.

Take whatever dough is left and make your thirteenth biscuit by piling the pieces on top of each other and then using your fingers to make it round. (Remember, the thirteenth biscuit is the lucky biscuit!)

Bake in the center or lower rack for 15-20 min or until nice and golden brown.

Makes a bakers dozen.

Serve warm!

 

SERVING SIZE:

One biscuit - No seconds! (Unless you are using CBD-rich ghee in which case, why not treat yourself?)
